Chicken Caesar Salad Recipe
- 1 Romaine Lettuce
- 20 large Croutons
- 50g Parmesan Shavings
- 2 Chicken Breasts
- 4 tbsp low fat Mayonnaise
- 4 Anchovy Fillets
- 1 Garlic Clove
- Juice from 1/2 a Lemon
- 1/2 tsp English Mustard

So I was asked by Central England Co-op as part of their Easy Eating campaign, to come up with a tasty dinner time meal that isn't complicated to make. This is just up my street as I love creating tasty meals from scratch that are easy to put together. With it being Summer, I thought what's more refreshing than a Chicken Caesar Salad Recipe? Don't worry, the dressing is really easy to make, so here's how to do it:
- We'll start by preparing the dressing. In a food mixer, throw in the Garlic, Anchovy Fillets, Lemon Juice, Mustard and Mayonnaise - blitz until smooth (that's your Caesar dressing made)!
- Next, wash the Lettuce then tear it up into a large mixing bowl.
- Crumble the Parmesan over the Lettuce then throw in the Caesar dressing and Croutons - thoroughly mix everything together with your hands.
- Finally, prepare the Chicken by cooking it in a grill or pan until there is no pink in the middle, and then slice into strips.
- Plate up the Caesar Salad from the bowl then lay the Chicken over the top.
Serve and enjoy!
