There’s nothing worse than thin watery soup. So check out my guide on how to thicken soup. I show you two methods by making a roux (with flour) and using potato. None of my methods use cornstarch.
Start by bringing your watery soup up to simmering point. Then follow one of these two methods:
Make a roux
- For each serving of soup, in a separate saucepan melt 15g of butter.
- Add 15g of plain flour and whisk over a low heat until you form a paste.
- Pour the simmering soup into the roux, whisk and briefly simmer to thicken, then serve.
Use a potato
- Cut up one small peeled potato and boil for 20 minutes in a separate saucepan.
- Drain then blitz the potato until smooth using a hand blender.
- Add the blended potato to the soup, whisk and briefly simmer to thicken, then serve.
