Chicken Parmigiana Recipe
- 1 Onion
- 2 Garlic cloves
- Oil (to fry)
- 350ml Passata
- 1 tbsp Oregano
- 1 Vegetable stock cube
- 2 Chicken breasts
- 75g Breadcrumbs
- 75g Grated parmesan cheese
- 1 Egg
- ½ Ball of sliced mozzarella cheese
- Handful fresh basil
Directions
My tasty chicken parmigiana recipe is easy to make in the oven and tastes great served with pasta or salad. It’s a traditional Italian-American recipe made in a delicious tomato sauce.
- Preheat the oven to 180c / 350f.
- Finely chop the onion and garlic.
- Heat some oil in a saucepan and fry the onion and garlic for 5 minutes.
- Add the passata, oregano, and crumble in the stock cube. Stir and leave to simmer for 15 minutes.
- Meanwhile, butterfly the chicken breasts and wrap each breast in clingfilm.
- Bash the chicken with a rolling pin to make them nice and flat.
- Add the parmesan and breadcrumbs to a bowl and break the egg into another bowl (and briefly whisk).
- Slice the chicken breasts so you have 4 pieces, then dip in the egg then the breadcrumb/parmesan mix.
- Once evenly coated, fry the chicken in a sauté pan for approx. 5 minutes on each side.
- When the sauce has finished simmering, add a small amount to the bottom of an oven dish.
- Lay the chicken into the oven dish then cover with the rest of the tomato sauce.
- Add the mozzarella on top and sprinkle over some more breadcrumbs/parmesan.
- Bake in the oven for 10-15 minutes.
- When the cheese has started to melt and the topping has started to turn crisp, remove from the oven.
- Garnish with some freshly chopped basil and enjoy.
