- 2 Garlic cloves
- 50g Chopped Chorizo
- 1 Pepper
- 1 Tin chopped tomatoes
- 1 Vegetable stock cube
- Salt (to season)
- ½ tsp Chilli powder
- 1 tbsp Oregano
- 1 tbsp Tomato puree
- Handful Fresh basil
- Pasta (to serve)
Directions
This is a perfect recipe for lunch or dinner. I’m cooking with Napolina tinned tomatoes to make this really easy spicy tomato pasta recipe with chorizo in the sauce.
- Peel and finely chop the onion and garlic.
- De-seed the pepper and chop into small pieces.
- Heat some oil in a medium sized saucepan on the stove then fry the onion, garlic, pepper and chorizo for 5-10 minutes.
- Add the tinned tomatoes, a pinch of salt, chilli powder, oregano, tomato puree and crumble in the stock cube.
- Stir everything together and top the sauce up with boiling water if it’s too thick.
- Leave to simmer for 10-15 minutes and prepare the pasta in the meantime.
- When the sauce has finished simmering and thickened, check for seasoning then stir in a handful of basil.
- Serve the tomato sauce with the cooked pasta, garnish with basil and enjoy.
This tastes great served hot or is perfect to eat as a cold lunch.
