This Recipe tastes great and is simple to make.  All it takes is wrapping chicken with Parma ham and rubbing some garlic and marjoram in-between.  Why stop with chicken?  You can use this technique with anything! View our recipe for chicken wrapped in parma ham and make sure you have the following:

– Chicken Breasts (x2)
– Parma Ham (x6 slices)
– Marjoram (x1 tsp)
– Garlic (x2 cloves
– Olive Oil (x1 tbsp
– Peas (to serve)

This is a real treat.  A great healthier alternative for a lasagne, and it’s now available with a cook-a-long recipe podcast.  View the recipe here.

We used turkey mince for this which is great because its very low in fat and cheaper and minced beef.

You will also need the following ingredients:

Meat Mixture:
– Olive Oil (to fry)
– x2 Onions
– Garlic (x2 cloves)
– Bacon (x4 rashes)
– x1 Carrot
– Celery (x2 sticks)
– Turkey Mince (500g)
– Red Wine (150ml)
– x2 Tin Chopped Tomatoes
– Oregano (x2 tsp)
– Salt & Pepper
– Spinach Leaves (150g)
– Cheese (25g)
– Pre-cooked Pasta Sheets
White Sauce:
– Milk (600ml)
– Flour (50g)
– Butter (50g)
– Salt & Pepper
Or 1 jar of White Sauce

I’ve never been a big fan of rice as I think it’s so outrageously boring!  However, I decided I would give it one last chance!  So after a bit of research and mixing and matching of recipes, I finally made a rice dish that tastes amazing!  And, (in the spirit of cooking from scratch) it is, of course, easy peasy to make and tastes great!  I call this Spanish Rice!

Simply, fry 1 small onion and 1 clove of garlic then add 375g of rice, 250ml of water, 1 chicken stock cube and half tsp of turmeric, cumin & oregano.  Season with salt and pepper and boil for 10-15 mins (keep topping up water so rice stays moist).  Best of all, you can jaz it up with anything, I added chorizo sausage – yum!

So I have always wanted to make an omelette but never really got round to it.  Surprising considering how easy they are to make.  Effectively, its scrambled egg with STUFF in!!!

Check out our Simple Omelette Recipe for the Weekend.  So simple and tastes great.

Make sure you have the following ingredients:

  • Eggs (x3)
  • Spinach (handful)
  • Tomato (x1)
  • Ham (x1 slice)
  • Olive Oil (to fry)
  • Salt & Pepper

Just lob it all in a pan, mix it and leave it!

So I was following a recipe the other day, it was roasted veg layered with chicken and a cheese sauce on top (tasted pukka by the way). The recipe was for a whole chicken – poached in a pan of simmering water for one hour. I’ve always thought poached chicken would taste kinda, well, disgusting. However, it turned out to be the perfect way to cook a chicken.

Poaching is great because it’s a healthy way to cook (no oil), the skin is easy to remove, and the meat literally just falls of the bone. One thing I hate about cooking a chicken is getting the meat off and poaching totally solves the problem.

It’s easier and clean up is a whole lot easier afterwards, and if you can be really bothered, you can use the water afterwards to make chicken stock.

allotment

Well firstly, apologies for not posting last week – boy was it a busy week.

But if you havn’t guessed already, FitBrits.co.uk now has an ALLOTMENT (God help us)!

We spent the first day there last week raking and digging and it felt like we had done nothing by the end of the day!  We finished the day by spraying Roundup on the overgrown weeds and grass, so hopefully the next visit will prove more rewarding.
