Eton Mess Recipe
- 2 Egg Whites
- 100g Caster Sugar
- 300g Strawberries
- 280ml Double Cream
- Strawberry Sauce
- Mint

My Eton Mess Recipe is a perfect dessert for the summer. Made with fresh strawberries, my recipe on how to make Eton Mess is really straight forward and serves 3 people.
- Whisk the Egg Whites in a mixing bowl until light and fluffy. Then gradually pour in the Caster Sugar whilst whisking.
- Continue whisking until the meringue mixture is thick and glossy, and until you can make stiff peaks.
- Separate the mixture into 6 and place on a baking tray that’s lined with some greaseproof paper.
- Bake in an oven preheated to 130c for 50 minutes.
- Meanwhile, prepare the Strawberries by cutting off the green and mashing half of them in a bowl with a folk.
- Whisk the Cream until thick then add the mashed and whole Strawberries. Briefly mix together.
- When the meringues are baked, leave to cool thoroughly then crumble into the Cream and Strawberry mixture. Briefly combine.
- Serve in bowls garnished with some fresh Strawberries, Mint and a drizzle of Strawberry Sauce.
