Tomato & Meatballs Bake Recipe
- 4 Meatballs
- 8-9 Cherry Tomatoes
- 1 Sprig Rosemary
- 1 tsp Mixed Italian Herbs
- 1 Garlic Clove
- Olive Oil
- Balsamic Vinegar
Directions
Here's the latest in my series of #LazyLunches for my Baked Beef Meatballs with sweet cherry tomatoes. Easy to prepare in minutes then take to work and bake the meatballs in the oven.
- Finely chop the Garlic Cloves and place into a roasting dish.
- Then add the Cherry Tomatoes, Mixed Italian Herbs, Rosemary and Meatballs.
- Drizzle over some Olive Oil and a good splash of Balsamic Vinegar then mix until the Meatballs and Tomatoes are well coated with the Oil and Herbs.
- Bake in an oven preheated to 180c/350f for 30-40 minutes, being sure to stir half way through cooking.
- Serve straight away with a fresh green salad.
