BBQ Curry Chicken Recipe
   Serves: 4 | Prep time: | Cooking time: 183 Calories & 10g fat per serving.
  • 4 Chicken Thighs
  • 2 tsp ground Coriander
  • 1 tsp Turmeric
  • 1 tsp Fenugreek
  • 1/2 tsp ground Cumin
  • 1/2 tsp ground Ginger
  • 1/2 tsp Chilli Powder
  • 4 tbsp Tomato Relish

Directions

Want to add some real flavour to your chicken when you're barbecuing? Check out my simple curry marinade which goes great when you rub it into chicken thighs and drumsticks.

  1. To start, get yourself a bowl and throw in the Coriander, Turmeric, Fenugreek, Cumin, Ginger and Chilli Powder. Then thoroughly mix all the spices together.
  2. Then add approx 4 tbsp of plain Tomato Relish to the bowl and combine with the spices until you have a nice, spreadable marinade (add more Relish if needed).
  3. Rub the marinade over all sides of the Chicken Thigh pieces, getting it into all the little pieces of chicken as well - it's easiest to use your hands to do this.
  4. Finally, cook on the BBQ or under the grill and enjoy.
