Broccoli and Stilton Soup Recipe
- 1 whole Broccoli
- 3 Spring Onions
- 1 Leek
- 1 Large Potato
- 25g Butter
- 1 Vegetable Stock Cube
- 135g Stilton Cheese
- 2 garlic Cloves
Directions
Soup makes for a great winter warmer and here is one of my favourite soup recipes made with Broccoli, Stilton and a few extras added in.
- Finely chop the Spring Onions and Garlic then set aside.
- Chop the Potato into chunks and slice the Leek, then wash under the tap and set aside.
- Melt the Butter in a large saucepan then fry the Spring Onions, Garlic, Potato and Leek for 5-10 minutes.
- Chop the Broccoli heads off the stalk then add to the pan. Crumble and mix in the Stock Cube then cover the ingredients with water so they're just about covered.
- Simmer for 15 minute with the lid on.
- After 15 minutes, carefully blend the ingredients using a hand blender until you have a consistency you're happy with.
- Chop the Stilton into chunks, stir it into the soup, then it's ready to serve.
