Cauliflower Rice Recipe
- 1 Whole cauliflower
- 1 tsp Olive oil
- 3 tsp Lemon juice
- 1 Handful fresh chopped coriander
Directions
This is great for vegetarians or if you’re concentrating on weight loss. My cauliflower rice recipe tastes great, it’s easy to make and a great alternative to rice.
- Remove the leaves and stalk from the cauliflower.
- Cut the florets off the cauliflower and wash under the tap in a colander.
- Put the florets in a blender or food processor and blitz until the cauliflower is the size of rice.
- Heat the olive oil in a non-stick frying pan then add the cauliflower rice. Stir in the lemon juice and chopped coriander.
- Fry for 5 minutes over a medium heat whilst stirring continuously.
- Once cooked, remove from the heat and serve straight away.
