Egg Fried Rice Recipe
- 2 Spring onions
- 3 Garlic cloves
- Oil (to fry)
- 150g Frozen sweetcorn
- 150g Frozen peas
- 80g Pre-cooked prawns
- Salt & Pepper
- 3 Eggs
- Cooked white rice (90g pre-cooked weight)
Directions
My quick and easy egg fried rice recipe is perfect to make at home. It can be easily adapted to a vegetarian dish by removing the prawns.
- Finely chop the spring onions and garlic cloves.
- Heat some oil in a frying pan and fry the spring onions and garlic for 5 minutes.
- Add the sweetcorn, peas and prawns to the pan then season generously.
- Fry for a further 3-4 minutes.
- Crack the eggs into a jug and whisk with a folk.
- Pour the egg into the pan along with the rice.
- Stir everything together over a low heat until the egg has just cooked. Serve and enjoy.
