Ratatouille Recipe

  • x1 Onion
  • x1 Potato
  • x1 Courgette
  • x1 Aubergine
  • x2 Red Peppers
  • x4 Tomatoes
  • Tomato Puree (x2 tbsp)
  • Olive Oil (to roast)
  • Rosemary Sprigs

Directions

Struggling to get your 5-a-day!? Try this really easy Ratatouille Recipe that's crammed full of vegetables.

  1. Chop the Onion into wedges and the rest of the veg into chunks (the smaller, the crispier). Halve the Tomatoes and throw everything into a roasting tin.
  2. Add the Tomato Puree and a drizzle of Oil to the tin and mix it all together thoroughly with your hands.
  3. Place about 5 Rosemary Sprigs on top of the mixture and cook in the oven on 200c for 30-40 minutes (stirring half way between).

It's that simple! And if you want to jazz up this Ratatouille Recipe even more, add some chicken to it (ensuring its cooked through when serving).
