Tomato & Meatballs Bake Recipe
   Serves: 1 | Prep time: | Cooking time: 264 Calories & 13g fat per serving.
  • 4 Meatballs
  • 8-9 Cherry Tomatoes
  • 1 Sprig Rosemary
  • 1 tsp Mixed Italian Herbs
  • 1 Garlic Clove
  • Olive Oil
  • Balsamic Vinegar

Directions

Here's the latest in my series of #LazyLunches for my Baked Beef Meatballs with sweet cherry tomatoes. Easy to prepare in minutes then take to work and bake the meatballs in the oven.

  1. Finely chop the Garlic Cloves and place into a roasting dish.
  2. Then add the Cherry Tomatoes, Mixed Italian Herbs, Rosemary and Meatballs.
  3. Drizzle over some Olive Oil and a good splash of Balsamic Vinegar then mix until the Meatballs and Tomatoes are well coated with the Oil and Herbs.
  4. Bake in an oven preheated to 180c/350f for 30-40 minutes, being sure to stir half way through cooking.
  5. Serve straight away with a fresh green salad.
