Apple Pie Cookies Recipe
- 1 Cooking apple
- 300g Pre-rolled shortcrust pastry
- 25g Tinned caramel
- Dried Cinnamon
- 1 Egg
- 5g Caster Sugar
Directions
My tasty caramel filled apple pie cookies recipe is a real winner and something a bit different when offering someone a cookie.
- Peel the apple and chop into small pieces. Then set aside.
- Take the pastry and cut out 12 circles using a 3 inch circular pastry cutter. Place on a baking tray lined with greaseproof or parchment paper.
- Spread a dollop of caramel on each pastry base using the back of a spoon.
- Place the apple chunks on top the caramel – be generous as the apple will shrink slightly in the oven.
- Sprinkle all the cookies with cinnamon.
- Cut thin strips from the remaining pastry and weave over the top of the cookies. Don’t worry if it looks a bit rough and ready!
- Beat the egg in a bowl and brush the egg wash over the cookies, then sprinkle them with caster sugar.
- Bake in an oven preheated to 200c/350f for 15-20 minutes.
- When lovely and golden, remove from the oven. Leave to chill briefly and enjoy.
