  • 175g Spaghetti
  • Knob of Butter
  • 75g Pancetta
  • 1 Onion
  • 3 Egg yolks
  • 50g Grated Parmesan

Directions

Did you know a traditional carbonara recipe doesn't contain cream? Learn how to make carbonara just like the Italians did back in the day with my recipe.

  1. Place a saucepan on the stove and melt the Butter.
  2. Finely chop the Onion and once the Butter has melted, add this to the pan along with the Pancetta.
  3. Fry for 5 minutes, or until the Pancetta begins to turn crisp.
  4. Cook the Spaghetti until al dente then add to the saucepan of fried Onion and Pancetta.
  5. Briefly combine the ingredients then remove from the heat.
  6. Place the Egg Yolks into a jug along with the Parmesan Cheese – mix together until smooth, using some of the starchy water from the Spaghetti if needed.
  7. Pour into the saucepan then toss the Spaghetti in the Egg Yolk Sauce. Serve and enjoy.
